PURPOSE:To obtain a tasty snack food having a mild sweetness of soybean milk of its own, by blending given amounts of bean-curd TOFU refuse which is not treated or previously soaked in a fixed slightly alkaline solution with wheat flour, starch, water, etc., processing the blend into a food. CONSTITUTION:100pts.wt. bean-curd refuse preadjusted to 7.5-8.5pH, and soaked in a slightly alkaline solution for 5-12hr is blended with 120-180pts.wt. wheat flour, 30-70pts.wt. starch, seasoning, an auxiliary for expansion, steamed or boiled and processed into a rice cake state. This rice cake is extended to a sheet having 1-3mm. thickness, cut into given shape and dried to 13-20wt% water content. This ingredient is preheated, fried in an oil or baked, and seasoned. |
