PURPOSE:To prepare the titled food containing the living cells of algae stably, and having excellent taste and flavor, by dispersing the living cells of unicellular Chlorophyceae or unicellular cyanophyceae in an edible gel. CONSTITUTION:One or more gelatinizing agents selected from gelatin, agar, carrageenan, etc. are dissolved together with alginic acid or its salt in water, sterilized with heat, and cooled to a temperature to survive the algae. Living cells of unicellular Chlorophyceae or unicellular cyanophyceae are added to and mixed with the obtained solution of the gelatinizing agent, and the mixture is extruded without delay through a small orifice into an aqueous solution of a bivalent metal salt such as calcium chloride. The obtained gel is washed with water. |
