The apparatus is used to heat wine in the waterbath for carrying out malolactic fermentations. The wine A passes through coils B immersed in a water tank, the water being maintained at 60 DEG by cycling through a central heating boiler C working on propane D. Thus, to heat a 200-hl tank, two hours are required to increase the temperature to 21 DEG . This apparatus is also used to cool the fermentation liquid with a set for producing cold water of 45 kilogram calories, which maintains the water at 10 DEG in the tank; it takes one hour to decrease the temperature by 5 DEG (the temperature of the tank being at 30 DEG ). <IMAGE>
