<p>PURPOSE:To prepare a health liquor having high alkalinity and nutrient value, by adding yeast to a culture liquid containing saccharide and nutrient, adding hydrolyzed algae thereto, and fermenting the mixture. CONSTITUTION:Yeast belonging to Saccharomyces genus, etc. is added to a culture liquid containing a saccharide such as glucose, and minor nutrients such as metals, vitamins, etc., and the liquid is fermented. Prior to or during the fermentation, the culture liquid is added with preferably 0.5-5wt%, based on the liquid, of hydrolyzed algae prepared by heating algae such as laver, KONBU, etc. in a solution of an acid such as hydrochloric acid. The liquid is adjusted to 2-8pH and fermented preferably at 5-40 deg.C to obtain the objective algae liquor.</p> |
