Glucose syrup with a low dextrose equivalent is prepared by the hydrolysis of starch with acid to obtain a product with a D.E. above 7% but below 16%, followed by treatment of the hydrolysate with an enzyme preparation of substantial α-amylose activity to obtain a final product with a D.E. between 23 and 35%. Potato, maize, tapioca, sago and wheat starches may be used. The α-amylose obtained from bacteria such as Bacillus Subtilis used at a pH between 3À5 and 9À0 is preferable for the second stage. The product is clear and non-hygroscopic and suitable for use in confectionery. |
