PURPOSE:To carry out the polishing of barley without causing the separation of the embryo, by polishing the grains of barley, rye, etc. to an extent to leave the embryo on the grain, adding water to the polished barley to attain a specific water-content, boiling and drying the grain to effect the firm adhesion of the embryo to the grain, and carrying out the subsequent polishing. CONSTITUTION:Grains of barley, rye, etc. are polished by conventional process to an extent to remove a part of the outer skin layer and dextrin layer and to leave sufficient amount of the embryo 2 on the grain 1. The grain is added with water to attain a water-content of 18-35%, steamed with saturated steam at 90-100 deg.C for 1-5min, and dried to attain a water-content of 10-20%. The starch contained in the embryo is gelatinized by steaming, and the embryo is toughened and bonded firmly to the barley grain by drying, and accordingly, the separation of the embryo from the grain during the following polishing process can be prevented. |
