PURPOSE:To prepare noodles which can be reconstituted easily with hot water to make noodles giving smooth and agreeable feeling to the palate, by adding alpha- starch to the flour used as a raw material for the preparation of noodles such as fresh noodles, dried noodles, etc. CONSTITUTION:alpha-Starch is prepared by suspending a starch-containing material such as wheat starch, corn starch, corn flour, wheat flour, etc. in water to a concentration of 5-50wt%, and gelatinizing, drying and pulverizing the suspension by conventional method at 90-150 deg.C for several-several tens minutes using a drum dryer, belt dryer, etc. The raw material flour is compounded with 1- 30wt% of the alpha-starch in the preparation of noodles. Porous noodles having improved reconstitution property and palatability can be prepared by this process. |
