The invention relates to a method for determining the thickness of bacon by means of comparative electrical resistance measurement between a plurality of electrodes for determining the grade of meat, in particular in the classification of slaughtered half carcasses of pigs. It has been a problem to date that the difference in resistance between fat and meat cannot be directly measured and numerous sources of error, such as smearing of the measuring electrodes known in the prior art, corrupt the measurement results. Again, the known methods are very expensive. The solution to the problems is achieved according to the invention when a measuring electrode (2) and two auxiliary electrodes (3,4) are used for measurement, the measurements being performed against one another and after one another in each case, and the resistance Rm of the measuring electrode (2) being determined by computation. <IMAGE>
