PURPOSE:To prepare Miso (fermented soybean paste) blended with shrimps keeping their figures, by mixing Miso with them and sweet Sake, boiling down the mixture so that taste of the shrimps is provided and flavor is enriched. CONSTITUTION:Shrimps whose heads are removed, covered with shells, are soaked in 1-2wt% solution of salt, dehydrated, 70-100wt% shrimps are added to Miso, this mixture is blended with 10-30wt% sweet Sake based on the total amount of Miso, and, if necessary, a proper amount of a ginger, Nanairotogarashi (Guinea pepper blended with other spices), lemon juice, etc., and boiled down for 40-60min. |
