PURPOSE:To prepare spherical oil-fried cooked food, by filling a pastry containing grain flour, a foaming agent and water and having a specific viscosity in a mold having a particular shape, freezing the pastry in the mold, and frying the non-spherical frozen pastry in oil without thawing. CONSTITUTION:A pastry contaning grain flour (e.g. wheat flour, mixture of wheat flour and rice flour, corn flour, corn starch, etc.), a foaming agent (e.g. a mixture composed of Na2CO3 as an essential component and containing tartaric acid, etc.) and water, as main components, and having a viscosity of 500- 200,000cps is filled in a mold having a cavity having an aspect ratio of 1-1.6 and an opening diameter (a) equal to or larger than the bottom diameter (b). The pastry is frozen in the mold, and the obtained non-spherical frozen pastry is fried in an oil without thawing, to obtain the objective spherical food. |
