A method for the production of a mixture of mannitol and sorbitol having a mannitol to sorbitol ratio of at least 1.5 to 1.0. Glucose is enzymatically oxidized by a pyranose-2-oxidase enzyme to produce a solution of glucosone which is reduced by catalytic hydrogenation using a nickel catalyst in the presence of hydrogen to yield a mannitol-enriched mannitol-sorbitol mixture suitable for use in foods, pharmaceuticals, cosmetics and textiles.
