摘要 <p>A mixt. of liq. aq. coffee extract and a variable amt. of roasted coffee, ground by addn. of liq. nitrogen to a particle size of 99% below 100 microns, which allows a homogeneous dispersion and remains in suspension is formed and continuously agitated, without, vortices, to prevent settling. The mixt. is spray dried and lyophilised to give a prod. protected from oxidn. This is packed in an inert atmos. to give a soluble Turkish coffee by addn. of an aq. phase.</p>
