PURPOSE:Light meat and dark meat of waste fowl are brought into contact with each other, tied, dried at a temperature suitable for the waste fowl and smoked, as an appropriate amount of steam is fed for a certain time, thus effecting smoking as well as permitting the resultant meat to be sliced. CONSTITUTION:Light meat and dark meat of waste fowl are brought into contact with each other, tied, previously seasoned and hung on the bar 13 in the iron tank 2 of the burning oven 1. Previously the meat is heated at such a temperature at which the protein of the meat does not coagulate and the meat does not harden such as at 90-100 deg.C for a certain time such as 140-160min for drying. Then, the temperature is maintained and an appropriate amount of steam is fed so that the meat is prevented from hardening by excessive drying and simultaneously smoking is effected for a certain time, e.g., 210-240min. Thus, the both meats are made into one lump without a binder and the product is sliced. |
