Process for utilising the waste heat of a baking oven

The invention relates to a process for utilising the waste heat of a baking oven, preferably a continuously loaded baking oven having baking surfaces moving during the baking process, which is equipped with one or more flue gas heaters and in which the baking chamber is indirectly heated by flue gas circulation. The aim of reducing the specific thermal energy consumption by utilisation of the waste heat contained in the flue gases and in the baking atmosphere removed by suction, with simultaneous increase of the thermal efficiency and simultaneous reduction of the use of corrosion-resistant steel, was achieved in that, in a system of heat exchangers, the waste heat of the flue gases removed by suction is utilised in a first heat transfer stage to heat the fresh air to be fed to the baking chamber and is utilised in a further heat transfer stage to generate steam, and in that a further steam generation is carried out by utilising the waste heat of the baking atmosphere removed by suction using the water to be vaporised which is heated in a third heat transfer stage and that the two steam quantities generated are admitted mixed to further use.
