Process for the continuous boiling of beer wort

In the process, wort withdrawn from a reservoir is preheated in a number of stages, is then brought to its final temperature in a further stage with the use of primary energy and is finally depressurised in a number of stages. The vapours from the depressurisation vessels (7, 8) impinge in countercurrent direction on the preheating heat exchangers (2, 3). An intermediate depressurisation vessel (4) is connected between the last preheating heat exchanger (3), which heats the wort to above 100 DEG C, and the final temperature heat exchanger (5), which intermediate depressurisation vessel removes from the wort those volatile constituents which would otherwise impair the flavour of the wort in the final temperature heat exchanger. The vapours removed from the intermediate depressurisation vessel (4) also serve to heat one of the preheating heat exchangers (2, 3). <IMAGE>
