PURPOSE:To obtain a refrigerated fruit juice of stable quality with a small quantity of heat and power and improved operation efficency, by using a plate type heat exchanger having a large heat transfer area and an indirect refrigerant adjusted to a temperature near the freezing point unique to the concentrated fruit juice. CONSTITUTION:The temperature of a secondary refrigerant for refrigerating a concentrated fruit juice is set at a temperature almost near the freezing point of the concentrated fruit juice to be refrigerated, and the refrigerating temperature of the concentrated fruit juice is set at a temperature somewhat higher than the freezing point of the concentrated fruit juice to be refrigerated and the set temperature of the secondary refrigerant. The temperature difference between the set refrigerating temperature of the concentrated fruit juice and the refrigerating temperature of the refrigerated concentrated fruit fuice at the outlet of a plate type heat exchanger 6 is sensed by a temperature sensor 10 for the refrigerated concentrated fruit juice, and the refrigeration is carried out by controlling the flow rate of the secondary refrigerant at the set temperature to the plate type heat exhanger 6 through a control valve 11. Therefore, the resultant refrigerated concentrated fruit juice has a uniform fluidity at a stable temperature without ice crystals.
