PURPOSE:A decoloring agent for food having secure effect and high safety, usable only by a simple operation of its addition without exerting bad influence on flavor of food, containing a melanoidine decomposing enzyme as an active ingredient. CONSTITUTION:A decoloring agent for food containing a melanoidine decomposing enzyme produced by Basidiomycetes, bacteria, ray fungus, etc. or a melanoidine decomposing enzyme using agarose having a melanoidine decomposing action on the market as an active ingredient is added to a food to be decolored. Effects will be obtained by spraying an aqueous solution of an enzyme upon a food having such a water content as to make an enzyme act. All the foods to change into brown by Maillard reaction are used as the object of foods, and Miso(fermented soybean), soy sauce, liquid or pasty seasoning, pickle, etc. may be cited as the object of foods. |
