BREWING METHOD OF REFINED SAKE

PURPOSE:To obtain a refined SAKE having improved taste and flavor, by dipping grains of perlite in charging water in a specific proportion for about one day, filtering the charging water to reduce the iron concentration, and using the resultant water for the brewing. CONSTITUTION:250g grains of perlite are dipped in 2l charging water, at ordinary temperature for about one day to reduce toxic substances, e.g. ammonia nitrogen, nitrous acid type nitrogen, chlorine type composition, cyanogen and cadmium, and bromine and neutralize acidic ions or weakly alkaline ions in the charging water to about pH 7.2. The resultant charging water is thenfiltered to give 0.01-0.02ppm iron cencentration. The filtrate water is then used for brewing to give the aimed refined SAKE. The perlite is a kind of vitreous rhyolite and an igneous rock formed as an effusive rock containing SiO, K2O, Na2O, etc.
