PURPOSE:To prepare parboiled rice having good palatability, preventing the crack of rice and proliferation of miscellaneous fungi, by cooling and polishing the rice grains immersed in hot water of a relatively high temperature for a short time. CONSTITUTION:Unhulled rice or unpolished rice is immersed in hot water at 50- 70 deg.C for 2-3hr, and cooled with water or air for several times each for 1-3min. When the rice grains are soaked uniformly with water, the grains are steamed and dried to obtain the objective parboiled rice. |
