PURPOSE:To prepare a food having soft bones and improved keeping quality with raw bones of an eel, by frying the raw bones twice in a vegetable oil, and processing the bones in a pressure vessel between the frying steps. CONSTITUTION:Raw long bones of an eel washed with water and dehydrated are cut to a short length, dried, fried in a vegetable oil, deoiled and retorted in a pressure vessel to soften fully the raw bones. The resultant softened bones are dried in cold air and dipped in a coating binder acting as a preliminary seasoning and a binder for improving the adhesion of a coating to the bones. A powder seasoned with a curry or cheese taste is smeared on the whole surfaces of the bones to prepare a coating thereon. The resultant coated bones are then fried in a vegetable oil. |
