PURPOSE:To prepare an antifoaming agent for the preparation of TOFU (bean curd), by compounding a higher fatty acid glycerin ester, palm oil, and magnesium carbonate. CONSTITUTION:An antifoaming agent suitable for the preparation of TOFU can be prepared by mixing (A) 90-50pts.wt. of granular, powdery or flaky higher fatty acid glycerin ester (having a mono-ester content of >=40wt%) with (B) 10-50pts.wt. of granular, powdery or flaky material obtained by heating and kneading palm oil (or its hardened product) and magnesium carbonate and cooling and crushing the mixture. |
