PURPOSE:To prepare the titled capsule in good operating efficicency in high yield, by cooling a fluid food to which a coagulant is added so that coagulated granules are formed, applying capsule covering to them in this state, raising the temperature so that the coagulant is loosened. CONSTITUTION:(i) A food coagulant (e.g., furcellaran) is added to fluid food (e.g., fruit juice, cola drink) and dissolved in it under heating. The solution is cooled to about 50-65 deg.C, citric acid, sodium phosphate, etc. is added to the solution and adjusted to a pH of <=3. (ii) The prepared solution is added dropwise to a liquid oil (e.g. salad oil) at 1-40 deg.C, cooled, made into granular coagulated food, (iii) and it is added to a film-forming agent solution (e.g., an aqueous solution of sodium alginate), so a capsule film is formed on the surface of the coagulated food. (iv) The resultant food is immersed in hot water at >=80 deg.C, heated, the reaction for dissolving coagulation promoted by the acid in the food coagulant is advanced so that the coagulated food in the capsule is converted into a fluid food. |
