Animal meat, e.g. principally fat, ground and chopped to particulate form and optionally admixed with stabilizer, such as gelatine, is supported by a layer of collagen film or membrane, or forms the filling between two collagen films in a sandwich-like product. Appropriate lengths of the product may be severed as desired from a reel and used as drapes or wraps around meat joints. If lean meat is used in the place of the fat, the resultant product (with a single collagen layer or two collagen layers) may be used in any food preparations where thinly-sliced lean meat is conventionally used. |
