A continuous process for the production of wort, wherein malt and crude grains are crushed and mixed directly with water, and separation of the ingredients is performed at the end of the process, wherein the mash passes through a reactor in an uninterrupted flow to undergo therein a treatment throughout the length of the reactor, such treatment preserving the enzymatic potential of each ingredient while preventing surface overheating actions, the said treatment comprising a progressive increase in temperature during passage through individual consecutive cells of the reactor and forced agitation reducing overheating and allowing the extraction and the diffusion of the active substances. |
