PURPOSE:To prepare a vitaminic MISO containing much vitamins B1, B2 and E and collected nutriments, by using a KOJI prepared from embryo buds or further with polished rice grains having embryo buds and soybeans. CONSTITUTION:Embryo buds alone or further with polished rice grains having embryo buds as raw materials are used to prepare a saltless KOJI by the conventional method. Soybeans are washed with water, dipped, steamed, added to the resultant KOJI, mixed with stirring, and charged into a bucket. The surface is smoothed, and the mixture is matured with a pressing lid placed thereon. |
