PURPOSE:The titled compounded seasoning powder usable conveniently, having improved stability for a long time, obtained by blending a koji with a liquor seasoning, drying and powdering it. CONSTITUTION:A finely powdered koji or its extract is blended with an alcoholic seasoning (e.g., ethyl alcohol, SAKE, sweet SAKE) to give an aqueous solution of a mixture, to which a water-soluble polysaccharide (e.g., dextrin, processed starch, etc.) is added. The prepared matter is subjected to spray drying at a temperature as low as possible, to give a koji-containing alcoholic seasoning powder. |
