The invention is an improved process and process equipment for preparing beef for cooking, particularly for cooking on a vertical rotisserie. The process is a step-by-step procedure for preparation of the beef. The process uses special process equipment of this invention that molds and compresses the beef preparation in a specific way to accomplish the end result that overcomes problems of the prior art in preparing beef for cooking on a vertical rotisserie. |
