The invention relates to the detection of substances by exploiting the reaction of antibodies formed in a defence reaction of the human or animal body against/to a defined substance, in order to detect these substances. This object is achieved according to the invention by exploiting the reaction of the antibodies formed in a defence reaction of the human or animal body against/to defined substances, for example to plants, from which sugars are extracted, and thus against the sugars of these plants, in order to detect whether a substrate, for example wine, contains this substance.
