摘要 From a supply of raw eggs, each in turn is carried to a cutting station, e.g. by a pair of mechanical jaws. The shell is slit open centrally and the two halves of shell pulled apart for disposal while the edible egg, complete in undamaged vitelline membrane, is dropped into the cavity of a cooking mould. The mould cavity is egg-shaped and is made of material transparent to electromagnetic radiation. The mould cavity inlet is hermetically sealed and the mould subjected to microwave irradiation so that the egg is pressure cooked to hard-boiled condition within the mould. The cooked egg is finally demoulded. The process can be incorporated in the coin-actuated cycle of a vending machine for hard-boiled eggs. Each egg can be dispensed in an individual plastic tray complete with condiment and paper napkin. For restaurants etc., a number of eggs can be simultaneously processed in a multi-mould machine. The prod. has a true egg-shape and appears to have been cooked in its shell. Cooking is very rapid, e.g. a complete cycle of 45 to 60 secs. only. The edible egg is heated, so cooking energy is reduced to a min. The complete process can be automated.
