Glucose isomerase was produced by fermentation with Flavobacterium arborescens and used to manuf. fructose. Thus, 100 mL medium contg. protein hydrolyzate 1, corn steep liquor 1, yeast extract 1, K2HPO4 1, KH2PO4 0.5 and lactose 2 % was inoculated with F. arborescens and incubated at 30≦̸C for 72 hr with shaking. Glucose isomerase activity was equiv. to 2892 μU/ml whole broth. Isomerization of glucose to fructose was accomplished by adding 10 g whole cells to 500 ml 50 % glucose syrup that was 0.01 M in MgCl2 and at pH 8.0. After 20 hr at 60≦̸C with gentle stirring, 45% of the glucose was isomerized.
