PURPOSE:To start vigorous proliferation of lactobacillus, and to induce the lactic acid fermentation of unrefined soy securely, by the seed cultivation of lactobacillus or lactobacillus strain separated from unrefined soy of the state of vigorous proliferation of lactobacillus, followed by the addition of the obtained culturing liquid to the charged unrefined soy. CONSTITUTION:Lactobacillus or lactobacillus strain is separated from unrefined soy under the state of vigorous proliferation of lactobacillus using a lactobacillus-separation medium containing an organic acid salt such as sodium citrate, sodium malate, etc. as a buffering agent. The obtained lactobacillus is subjected to the seed cultivation in a lactobacillus cultivation medium containing an organic acid salt, essentially without performing subculture. The cultivation liquid thus obtained is added to the charged unrefined soy. |
