PURPOSE:To obtain a stable separation type dressing, consisting of an aqueous phase part containing mustard, starch and gums or egg yolk and an oily phase, capable of providing stable temporary emulsifiability in shaking and hardly causing haze in the interface between an oily phase and an aqueous phase after shaking and allowing to stand. CONSTITUTION:A separation type dressing obtained by placing an oily phase part containing an auxiliary raw material, e.g. spice oil, etc., mixed therein on an aqueous phase part prepared by dissolving water-soluble or water- dispersible seasonings consisting of edible vinegar, common salt, soy sauce, peppers, sugar, organic acid, sodium glutamate, nucleic acid based seasoning, etc., 10-30% mustard, 1.0-4.0% starch and 0.01-0.06% gums, e.g. guar gum, or 0.02-0.3% egg yolk in water at 1:9-9:1 ratio. |
