Protein recovery from salt-contg. solns. - by demineralisation and pH adjustment

Recovery of proteins from aq. or organic solns. contg. proteins, mineral salts and opt. other solutes is effected by demineralising the soln. and adjusting its pH so that protein pptn. takes place at the end of the demineralisation operation, and opt. separating the ppted. proteins from the soln. Demineralisation can be effected by ion exchange, electrodialysis and/or dialysis and is pref. continued (opt. in stages with intermediate protein pptn.) until the salt content is 5 wt.% or less on a dry basis (esp. 1% or less when the soln.is whey). The process is esp. applicable to whey or to animal, vegetable or microbial protein hydrolysates. The process is simple to operate and yields high-purity proteins suitable for immediate use, e.g. in foodstuffs.
