The device is used on a non-linear sample such as a food product, and has a casing in which a sample-holder supports the sample under test. A guided moving body is used to drive the moving body. A sensor then measures the displacement of the moving body, and an electronic device automatically controls the equipment and measures the stresses and strains as a function of the time during which the force is applied to the sample. The data obtained are stored in a memory for subsequent processing and display on a luminous scale.
