<p>PURPOSE:To obtain frozen peaches having the luster, color and flavor of natural peaches retained intact without discoloration in thawing, by immersing peaches in a specific saccharide solution, taking the peaches out of the solution, and feezing the peaches. CONSTITUTION:Peeled and cored peaches are immersed in a saccharide solution, e.g., an aqueous solution of sucrose or fructose, having a saccharide content (Bx indication) of about 20 degrees at a pH of about 3.8-4.2 and a temperature of about 75-100 deg.C, and taken out of the solution. The peaches are then subjected to the vacuum treatment if necessary, contained in a plastic container and quickly frozen to give the aimed frozen peaches.</p> |
