PURPOSE:To prepare bread crumb for preservation having a small amount of bacteria, capable of being stored for a long time, by grinding baked breads in a flow of carbon dioxide gas. CONSTITUTION:Bread obtained by conventional fermentation and baking are allowed to stand and cooled in such a way that they are subjected to secnd contamination as hardly as possible, and fed to a grinder. The baked breads are ground while an atmosphere in the grinder is replaced by 50-100% carbon dioxide gas, if necessary, the ground breads are dehydrated and dired in the atmosphere of carbon dioxide gas. The bread crumb is packed in a hermerically closed container. |
