Organic materials, esp. food stuffs, e.g. potatoes are treated by the direct passage of electric current through an electrolyte surrounding the materials. The characteristics of the electric current are varied during the treatment. This may be achieved by passing the product through different stages, each stage associated with a different power dissipation. |
