PURPOSE:To obtain a high-melting agar excellent in heat and acid resistance, viscoelasticity, etc., by dispersing a mixture of respective specific amounts of agar with gelan gum in water in the presence of a specified amount of a metallic salt and gelatinizing the resultant mixture. CONSTITUTION:A high-melting agar obtained by dispersing a mixture consisting of, e.g. 30-99.7wt.% agar, 0.2-70wt.% gelan gum and 0.1-50wt.% metallic salt (preferably citric acid, etc.) in water, completely dissolving the dispersion with hot water, cooling and gelatinizing the resultant solution. |
