PURPOSE:To directly obtain the subject compound useful in the field of foods, etc., from an alpha-aminonitrile compound of racemic modification by treating the compound with a specific nitrile hydrolyzing bacterium in the presence of an aldehyde. CONSTITUTION:An alpha-aminonitrile compound (e.g., 2-aminopropanenitrile) shown by formula I or II (R1 and R2 are alkyl or phenyl) is treated with a bacterium [e.g., Nocardia SP. PC-29 (FERM-BP 1561)] belonging to the genus Nocardia, Mycobacterium or Corynebacterium, having hydrolyzing activity in the presence of an aldehyde shown by the formula R-CHO or formula R-CH2CHO to give the aimed compound. |
