PURPOSE:To obtain a food boiled in ''miso'' (fermented bean paste), having delicate and thick deliciousness and favored widely, by boiling a food in fish soup containing ''miso''. CONSTITUTION:Fish broth produced as a by-product in the preparation of ''tsukudani'' (fish or shellfish boiled down in soy) or of boiled fish for a daily dish, fish soup obtained by the filtration, concentration, etc. of the broth, or a mixture of the above with various seasonings, is mixed with ''miso''. Food raw materials such as fish, shellfish, meat, bean products, vegetables, etc. are boiled in the seasoning solution prepared above. |
