<p>One of the ovens is for baking a large output of mass-produced loaves or patisserie prods. while the second oven simultaneously bakes prods.of a more individual nature.The proving chamber is available for processing the prods. for either oven or both. One of the ovens is now of the type which receives a trolley, the other oven has a fixed hearth plate. The ovens are both equipped with heat exchangers and a vapour generator supplies vapour to both ovens and as required to the proving chamber. A system is from the ovens and from the proving chamber as necessary. The ovens and proving chamber are pref. assembled as a transportable, packaged unit on a common supporting frame. The three elements are pref. enclosed in a common layer of thermal insulation inside a single outer casing. A single, vapour extraction hood is pref. fitted on top of the assembly to all three elements. A compact, packaged unit is achieved. Heat consumption is reduced to a minimum by wrapping the combined elements in a common, insulating jacket.</p> |
