PURPOSE: To prevent the rapid reduction of a flavor by accelerating the generation of the flavor by the continuous exothermic reaction of a flavor generation composition and then, rapidly cooling it. CONSTITUTION: At the time of heating the flavor generation composition provided with oils and fats for generating the flavor of broiled charcoal and generating the flavor, the thin film of the flavor generation composition is heated in an atmosphere provided with oxygen on a thin film heat exchanger and made higher than 600 deg.F within 2 minutes and the temperature of a product originated by the exothermic reaction is made higher than 650 deg.F. Then, a smoke- like reaction product is rapidly cooled to 210-230 deg.F while removing the small amount of steam containing a tar-like stimulative component from the product extracted from the heat exchange so as to improve the flavor. |
