<p>The mixt. is cooked in a moderate oven. Before mixing commences a small amt. of liquid coffee is pref. added. Egg yolk may also be pref. added. Before cooking, a small amt. of vinegar and/or perfumed alcohol is pref. added to the paste. Three pref. recipes are as follows:- (1) 130-150g non-blanched grated almonds, 4 eggs, 6-10 cl of water, 3 teaspoons of soluble coffee, 60-120g chocolate or cocoa and 100-120g sugar; (2) 105g non-blanched grated almonds, 6 eggs, 140g softened chocolate and 150g sugar; (3) 170g grated hazelnut, 6 egg whites, 1 teaspoon of alcohol vinegar, 1 teaspoon of rum or perfumed alcohol, 100g chocolate powder, 120g sugar. The cake does not contain flour or fats and does not require preservatives, special packing or cold storage.</p> |
