PURPOSE:To obtain an emulsifier composite which shows the quality improvement effect for a food containing starch and is superior in preservability, by subjecting glycerol fatty acid monoester of a fixed iodine number and of a specific ratio of saturation to unsaturation to heat treatment after powdering. CONSTITUTION:A high-purity glycerol fatty acid monoester composite of iodine number 10-40 where glycero saturation fatty acid monoester and glycerol unsaturation fatty acid monoester are adjusted to be in 65-85% and 35-15% respectively. This composite is subjected to heat treatment at 45 deg.C or more, but where it is not fused, for 30min or more after powdering, thereby obtaining an emulsifier composite. This emulsifier composite has the superior quality improvement effect for food containing starch such as bread and cake and is superior in preservability, operatability, and economy. |
