PURPOSE:To prepare a seasoning having excellent taste and small of garlic and high preservability, by pickling segments of garlic or sliced garlic in vinegar, and adding the pickled garlic to a mixture of specific amounts of food oil and soy sauce. CONSTITUTION:Cloves of garlic and/or sliced garlic are pickled in vinegar for one night. The pickled garlic is added to a mixture composed of 20-80pts.wt. of food oil and 80-20pts.wt. of soy sauce. The amount of garlic to be added to the mixture depends upon the desired taste and flavor of the seasoning, however, it is pref. 1-20wt% of the total weight of the seasoning to obtain seasoning having agreeable taste and flavor. |
