<p>The process comprises impregnating it with an aq. soln. of carbon dioxide or a carbon dioxide precunsor, diffusing the soln. in the tissue, then dehydrating it by applying heat and/or reduced pressure sufficient to release CO2 gas inside the tissue thus preventing shrinking. Solns. for use in the treatment of a food prior to dehydration comprise either (a) an aq. soln. contg. 0.1-5% of an alkali metal carbonate; 0.1-5% of citric, tartaric, acetic, ascarbic, phosphonic, malic, lactic, aclipic, succinic, fumaric or gluconic acid; and 0.1-5% of an alkali metal sulphate or metabisulphate; or (b) an aq. soln. contg. at least 1.5 volume of CO2; 0.1-5% of an alkali-metal sulphate or metabisulphate and 1-5% of a soluble starch. Process is esp. applied to foods such as meat, poultry, fish and partic. fruit and vegetables. Process enables improved dehydration; the dried prod. being more easily hydrated giving a better reconstituted prod.</p> |
