Pasteurising and maturing of milk prods. such as ice cream is carried out in an installation which has separate heatable and coolable vessels for the prod.to be processed. The prod. is initially heated to the pasteurising temp. using a heating circuit and is then cooled to the maturing or storing temp. Specifically the heat extracted from the prod. when it is cooled is used in a further vessel for more material which is to be heated to the pasteurising temp. Pref. a heat pump is used in the heating and cooling circuits. Energy requirements are less than in prior art systems and the installation is relatively compact.
