[Also in Division G3] A device for controlling the thickness of a rolled sheet comprises a sensing means 32 which transmits a signal corresponding to the actual thickness of the sheet to a comparison means 38 where it is compared with a reference signal corresponding to the desired thickness of the sheet. The resultant error signal is fed through a cascaded delay circuit and linearizing filter 42 to a servomotor 40 which affords a primary control of the gap setting of rollers 36. Secondary control is afforded by intermittently modifying the signal from 32 by an error feed-back signal derived from a second sensing means 50, adapted to measure the final thickness of the sheet, and a comparison means 56. In the example shown in the Figures, a dough sheet is rolled by first passing through pairs of rollers 12, 20 and 28, have successively smaller roll gaps, the speed of which rollers is controlled according to the thickness sensing means 18, 24, and 32. The sheet is then rolled by variable gap rollers 36 controlled as described above and is finally conveyed to a take-off conveyer 48 upon which it falls as ripples. During normal operation the ripples, which give some indication of the final relaxation state of the sheet, subside before they pass under means 50. However in the event of their not subsiding the signal from 50 will include an A.C. noise component and this is removed by filter 54. If control of the ripples, and thus of the relaxation of the dough is desired, then the means 50 is sited over the ripples. The A.C. signal is stripped from the resultant signal from 50 and is passed to a decision box 72. When the A.C. signal is above a predetermined amplitude band, which signal is indicative of the ripples being too large, an intermittent signal is fed to speed control means 52 which increases the speed of the final conveyer 48 until the A.C. signal falls back into the desired amplitude band, this being indicative that the ripples have become smaller and lie within the desired range. If no intermittent signals are received by 52 then the speed of 48 is decreased incrementally thus increasing the height of the ripples until they again fall outside the desired range into which they are then brought again by the box 72. The desired intermittent operation of the feed-back signals to 54, and thus of the secondary control signal, and of the decision box 72 is afforded by linked switches 74, 76, only one of which can be open at any one time.
