Onion rings are made from broth mix which can be injected through a bush and cutter to form the rings for subsequent dipping in a bath of dressing and final stabilising by frying or freezing. The mix is coated with gelling agent as it leaves the injection head thus preserving its shape during the free fall to the bath and belt conveyance through the dressing stations. |
