<p>Potato protein, prepd. by heat-coagulating amniotic potato liq., is purified from enclosed, associated or complexed contaminants, e.g. lipids, odoriferous and flavouring components, by a step process comprising suspension, boiling and extn. with a polar solvent. The potato obtd. can contain 93-95% protein and 1% minerals; has a neutral taste and smell and can be used for human nutrition. Lipid removal improved protein storage-stability. Specifically a 2-step purificn. involves (i) suspn. in hot water at >100 degrees C and (ii) suspn. of decanted coagulate in hot EtOH, whereby lipids are extd. in the aq. EtOH.</p> |
